How to make Chile Rellenos!

Chile rellenos are a traditional Mexican meal, made mostly in every Mexican home. My mom learned by watching her mom cook in Mexico, and now I am learning from my mom. In the process of my mom learning she had a lot of trial and error until she finally perfected them. A cool fact is that chiles rellenos are traditionally made with green chile (chile poblanos) but my grandmother started to make them with red chiles since they were quicker to prepare.

Ingredients:

  • 10 Chile Anchos

  • Cut Cheese (any type of cheese but we used mozzarella cheese)

  • about 4 eggs

  • Oil

  • 2 spoonfuls of wheat flour

  • 4 garlic cloves

  • Half an onion

  • Salt

  • about 10 tomatoes

Instructions:

*This recipe is for about 10 chiles*

  1. Collect the listed ingredients and set a pan and a pot on the stove  to warm up before you cook

  2.  Pre-heat the chiles on the pan in order to be able to stuff them with cheese, remember that this will not take long since we only want them warm enough to be manageable.img_6444

  3. Stuff the chiles with a lot of cheese  in order to make them fat.img_6481

  4.  Then begin to prepare the sauce, by putting about 9 tomatoes, half an onion,  and 4 garlic cloves in the blender until they are all smooth and liquidy.img_6489

  5. When the sauce is ready, pour it in a cooking pot, then add salt to your liking and leave on the stove as you prepare the chiles.img_6504-1

  6. Separate the egg whites and egg yolks into two different plates, then whisk the egg whites until the mixture is very foamy. To check if the foam is ready,  flip the bowl the foam should not fall out. If the foam seems too liquefied then keep mixing until the test is passed.img_6523

  7.  Set some oil in the saucepan so the chiles could be fried once the foam is ready.img_6532

  8.  Next mix the egg yolks in with the egg whites for a few seconds to get a yellow tone, lastly add the wheat flour in to the foam for about 15 seconds and the foam should be ready.img_6548

  9.  Now that the foam is ready, the chiles are ready to be covered. Dip the chile in the foam and make sure to cover the entire chile.img_6557

  10. As the chiles are being covered begin to add them to the saucepan with oil so they can get fried. You will know a chile is ready once they turn golden brown.img_6564

  11. Check if the sauce is boiling and if it is then add the chiles that are ready into the cooking pot. Let the chiles sit in the pot until they are soft and then put them on a plate to eat.img_6570

  12. Hooray! Now you are done and will be able to eat a delicious chile!img_6591
